This pesto chicken dish is absolutely delicious, and sure to be popular with the whole family. For a lighter version, skip the cream and add a little more pesto – it tastes even better if you make your own using fresh basil or rocket!

Ingredients
- 3 tbsp olive oil
- 4 chicken breasts, thinly sliced
- 4 tbsp basil pesto
- 240ml cream
- 400g spaghetti or fettucini
- Salt and pepper
To serve:
- Parmesan, grated
- Handful of basil leaves, chopped
Instructions
1. Heat the oil in a large frying pan over a medium-high heat. Add the chicken and cook for 5-6 minutes, stirring often, until browned.
2. Add the basil pesto, cream and plenty of seasoning, and stir well to combine. Reduce the heat slightly and cook for about 5-6 minutes, or until the sauce has thickened slightly.
3. Meanwhile, cook the pasta according to packet instructions. Drain and add to the pesto mixture. Toss over a low heat until well combined, then serve topped with grated Parmesan and chopped basil leaves.
