Two Ingredient Bread Rolls

Aileen Cox Blundell has shared a few recipes with us, for inspiration.

These bread rolls almost crashed my website the first week they were released. They are super easy to make and use only two simple ingredients – yogurt and self raising flour.

If you don’t have self raising flour you can use plain + 2 tsp of baking powder. For dairy free rolls, use your favourite yogurt with the juice of 1/2 a lemon and self raising flour.

Here’s how to make two ingredient bread rolls:

All you need is one equal measure of self raising flour and yogurt. I use:

  • One mug self raising flour
  • One mug yoghurt
  • Egg wash (optional)

Note: If using plain flour add 2 tsp baking powder for every 130g (1 cup) flour.

  1. Pre-heat oven to 180ºC (350ºF)

  2. Mix self-raising flour and yogurt in a bowl until it forms a dough. If the yogurt is thin you may need an extra few tablespoons of flour.

  3. Empty the dough onto a floured surface and bring together, then cut into even-sized pieces and roll each one into small mini loaves

  4. Brush a little egg wash on top (if using).

  5. Bake for 20 minutes until risen and golden.

  6. Serve cold or warm
